Amateur and experienced chefs alike will enjoy this collection of 150 recipes for your cast iron skillet. Cast iron skillets are booming in popularity: they’re versatile, they’re relatively inexpensive, and they don't have the toxic chemicals released by artificial nonstick pans. Though cast iron was the only pan in grandma’s kitchen, these 150 recipes are fresh and updated.
They range from traditional skillet favorites, like Seared Chicken Hash, Spanish Potato and Sausage Tortilla, and pan-seared steaks and chops, to surprising dishes like cornbread with an Italian spin; quesadillas filled with brie, papaya, and pineapple; and a gingerbread cake topped with fresh pears. “ The New Cast Iron Skillet Cookbook is . .
. a damn fine work that’s at once a treatise, chronicle, and paean to perhaps the most versatile tool in a cook’s arsenal. .
. . I promise you, with this book your cast iron skillet will never again leave the top of your stove.
It’s that good.” —David Leite, publisher of the two-time James Beard Award-winning website Leite’s Culinaria (LCcooks.com) “Ellen Brown is like a well-seasoned cast iron skillet—both continue to improve with age. Ellen has compiled a scrumptious collection of original and heirloom recipes for America’s favorite cooking utensil. Great cookbooks and great skillets last forever.
Fortunate are those who buy or inherit both.” —Irena Chalmers, author of Food Jobs 2: Ideas and Inspiration for Your Job Hunt “This is one of those rare, beautiful cookbooks you’ll actually use . In fact, I'd venture to guess that you’ll likely be compelled to open it daily—or at least every time you draw up a grocery list—and that your trusty skillet will soon settle in to a most convenient storage spot: the stovetop.” —Liana Krissoff, author of Canning for a New Generation

I just received the book, and I knew it was a gem! The slip cover is beautifully done, feels like canvas, very raw and fresh feeling! The pictures inside are beautiful to look. While perusing the recipes, they seem to delicious and full of flavor and I can't wait to try them. They are not just your average every day recipes, and give flare to your day. Can't wait to try the recipes!
Great book, Great skillet recipes. I've gone back to using all of my Cast Iron Skillets and Dutch Oven having tired of non-stick pots and pans that peel into the food. Can't remember why I packed the cast iron in boxes and put them on a shelf in the Garage, but they are all back in the kitchen, having been re-seasoned and are the darlings of my life once again. This book will remind you how to care for these family heirlooms and provide you with delicious recipes to boot. I highly recommend the book, it is well written.
I simply had the winter-blues and went looking for inspiration at my local library when I fell in love with this book. What has impressed me the most is the huge range of recipes that I never considered using my cast iron pans for: sticky buns, tortillas, soda bread, fruit tarts, veggie pancakes... I also appreciate the fresh take on traditional meat-centric recipes. For example, the chicken potpie recipe is packed with delicious veggies and fresh herbs I harvested from our garden. And it has a ton of egg recipes in the brunch section, which is a big win for us since we keep a backyard flock of hens. Initially I borrowed this book from the library, but quickly realized I needed to buy my own copy. It's a welcomed addition to my kitchen library and I feel confident that I'll be cooking and baking from this book for years to come.
This easy cookbook provides the best of both worlds — great food with limited cleanup. The title says it all “150 Fresh Ideas (well, to be honest not all of them are fresh) for America’s Favorite Pan. But more importantly many of the recipes were either new to me or constructed in a unique and successfully creative fashion. As we all know the benefits of creating a delicious and nutritious budget-conscious one-pan meal are self-evident and many. This book provides those recipes. And if you aren’t currently cooking with a cast iron pan you really should seriously consider it for all the reasons above. My $35 investment in a Lodge cast iron pan (or whichever pan you use) has been paying big dinner dividends since the first time I put it on the stovetop.
Love the format, nice concise recipes, beautiful pics, each section has recipes together i.e. all chicken dishes together whereas other cookbooks spread everything all over the place. Most of the recipes are quick and easy. Reminds me of Americas Test Kitchen 30 minute recipes only much better. Btw there are alot of modern current recipes like stir fried thai chicken with basil or salmon with balsamic chili glaze, both easy to cook. Then there are the old school steak dishes, chicken dishes with lemon and garlic etc. Im just a guy thats beginning to cook and honestly cooking with cast iron is cool and fun. Less dishes too as you can transfer pan to oven. The food just cooks differently and tastes different. It is an excellent change of pace. I HIGHLY recommend this cookbook and even over all the americas test kitchen books which I like and have a few of. Two thumbs up.
Purchased a cast iron skillet over the holidays, and this book came highly recommended. And, it does not disappoint. Great recipes for you and your family!
I have been using this book since 2014. It’s great. The complaint about “lacking theory” or being “light” on it is ridiculous. It’s a cook book and if you need theory there are countless YouTube videos you can watch. And in regards to being wrong about manufacturing details, That’s also a ridiculous statement cause casting iron is 100% the same. You can still buy cast iron that is smooth and thinner like a Griswold. Anyway, been using for almost ten years and by now it looks like Harry’s potions book from the half blood prince with all the notes and dog eared pages and wine stains etc. trusty book that’s worth more than the current price.
Great information on the seasoning and care of skillet. Great ideas on new recipes
